Egg Casserole

This is one of our family's favorite recipes. We normally eat it for dinner, but we made it for breakfast to share with Grandma & Grandpa before they drove back home this morning.

1 T. butter
1-½ c. (6 oz.) Canadian bacon, diced
1 t. onion powder
2 T. chives (fresh or dehydrated)
8 eggs, beaten
2 c. cheddar cheese, grated
3 c. diced potatoes, thawed
1 c. milk
1 t. salt
½ t. pepper

1. Preheat oven at 350 degrees. Melt butter in skillet and saute Canadian bacon, onion powder, and chives for 5 minutes.
2. In a large bowl, combine eggs with milk, salt, pepper, potatoes and 1 cup of the cheese.
3. Add the bacon mixture and stir well.
4. Pour into a 13x9 baking dish and bake for 30 minutes.
5. Sprinkle the remaining cup of cheese over the top and bake for 10 minutes longer or until casserole has cooked through and is firm.

Serving Suggestion: Serves 6-8 ~ Cut into squares and serve with toasted English muffins
